Hearts of Palm Salad Recipe

Valentine’s Day is less than a month away. Are you going to do anything special? When I used to wait tables I never understood why people would spend money to eat out on one of the busiest restaurant days of the year. Expectations are high and service is usually compromised. Save the energy for another day. Tony and I spend Valentine’s Day doing dinner at home and spoil ourselves another day.

If your partner’s love language is acts of service, cooking may be a great way to show your love. From now until Valentine’s Day, I will be sharing with you some Valentine’s Day themed dishes. This weekend’s recipe is one I came up with on a whim. It’s a healthy and very refreshing Hearts of Palm Salad. Healthy, clean, and delicious, and so very easy to make. It makes for a perfect starter salad or side dish.

Hearts of Palm Salad

Hearts of Palm Salad recipe:

Ingredients (I happened to get all of my items from Trader Joe’s):

  • 1 Jar of Hearts of Palm (drained and chopped to about 1 inch pieces)
  • Organic Heirloom Tomatoes (about 6, quartered into consistent bite sizes)
  • 3 to 4 Persian Cucumbers, sliced diagonally
  • Coarse Salt and Fresh Ground Pepper to taste
  • Optional: 5 mint leaves, torn

For the Dressing:

  • 2 cloves of garlic, minced (skip this if you don’t like garlic)
  • 3 T of Extra Virgin Olive Oil
  • 2 T of Balsamic Vinegar
  • Salt and Pepper to taste
  • Optional: juice from half of lemon


  1. In a cereal bowl, mix all of the 4 items to make the dressing using a fork
  2. In a salad bowl, gently mix the heats of palm, cucumbers, tomatoes, mint leaves and salt and pepper
  3. Add the dressing to the salad bowl, toss and enjoy
